Smoked Brisket

With a new pellet smoker, have had greater ability to work with choice cuts of meat like brisket.

Lessons learned:

  • Don’t slice it all at once. It looks beautiful but the meat dries out quickly.
  • Not a fan of injecting with liquid.
  • Save the juices to have a little au jus while serving.
  • Let the meat rest, wrapped, for an hour after removing from the smoker.
